This is so lovely Mia. I love making vegetable tarts this way especially in miniature. s We are not big dessert people here, believe it or not~ hehehe. We prefer fresh fruit. So any excuse for a vegetable tart is always on the table. I don't make enough. Eggplants are my favorite too!
