Baked Parmesan Carrot Fries With Cilantro Dipping Sauce




Fries:
1/2 cup freshly grated parmesan cheese
8 large carrots
3 garlic cloves, crushed
1 tablespoon honey
Extra Virgin olive oil
Sea salt and black pepper

Pre heat oven to 500 F

Clean and cut carrots into 1-inch fries. In a large bowl combine all the ingredients. Drizzle a generous amount of olive oil all over carrots and add parmesan cheese. Toss to combine and add to a large baking sheet. Season with sea salt and black pepper. Bake for 10 minutes turning over occasionally. Sprinkle extra cheese over the top. Serve hot with dipping sauce on the side.

Cilantro Dipping Sauce:
1/2 cup sour cream or Greek yogurt
1/2 small green chili, seeded and finely chopped
1 small garlic clove, crushed
Handful Fresh cilantro
1 teaspoon fresh lime juice
1 teaspoon sugar
Sea salt and black pepper

Blend all the ingredients for a smooth consistency. Season with sea salt and black pepper.
