Baked Parmesan Carrot Fries With Cilantro Dipping Sauce



Fries:
1/2 cup freshly grated parmesan cheese 
8 large carrots 
3 garlic cloves, crushed 
1 tablespoon honey
Extra Virgin olive oil 
Sea salt and black pepper

Pre heat oven to 500 F

Clean and cut carrots into 1-inch fries. In a large bowl combine all the ingredients. Drizzle a generous amount of olive oil all over carrots and add parmesan cheese. Toss to combine and add to a large baking sheet. Season with sea salt and black pepper. Bake f or 10 minutes turning over occasionally. Sprinkle extra cheese over the top. Serve hot with dipping sauce on the side.

Cilantro Dipping Sauce:
1/2 cup sour cream or Greek yogurt
1/2 small green chili, seeded and finely chopped 
1 small garlic clove, crushed 
Handful Fresh cilantro 
1 teaspoon fresh lime juice
1 teaspoon sugar 
Sea salt and black pepper

Blend all the ingredients for a smooth consistency. Season with sea salt and black pepper.
