Fruit and Nut Energy Bars (gluten-free)


Yield: 30  bars

1 cup ground flax seeds
1 cup ground hemp seeds
1 cup chia seeds
2 cups apple cinnamon quick cooking oats
1 cup chopped dried apricots
1 cup dried cranberries
1 cup sliced almonds
1 chopped dried apples
1 cup milk chocolate or dark chocolate chips
1 cup crunchy salted peanut butter
1 cup pure maple syrup or honey
2 tablespoons orange zest
Sea salt

Preheat oven to 350 F

Melted peanut butter and maple syrup or honey.  Stir into the dry ingredients to combine.

Pour into a non-stick 16 by 12 inch cookie sheet pan. Use a rolling pin to spread the mixture into a even layer. Grind sea salt over the top. Bake for 30 minutes. Leave to cool completely before cutting.

Store in an airtight container in the refrigerator.

Sounds great Mia, how long would they keep in the fridge?

Betty - I'm guessing 8 weeks or more. Mine never lasts that long. As long as the container is airtight.

Hemp Seed can be left out if you are not a fan or hard to find where you are. :)

We are trying to do no grains. Could you use almond flour in place of the oatmeal.

Would it come out ok if I left all the seeds out? This looks soooo good, but I cant have seeds due to diverticulitis...

I wonder =how it would be if you replaced the Hemp seeds with Chia seeds. Since there is no actual Liquid they probably wouldn't get slimy but would really give you an energy boost.

My grandson is allergic to peanuts, what could I use instead of the peanut butter?

Connie - I've made them with Chia seeds and they are really delicious. Anonymous - Is he allergic to all nuts or just peanuts? Almond Butter would work. Leave it out and use extra raw honey.
