Fish Kale Kebabs


1 lb wild caught firm white fish, cut into large chunks
1 large red onion
2 large yellow peppers/capsicum
1 large bunch of kale
1 small garlic, minced
2 tablespoons lemongrass paste
1 large lime, juiced
1/2 cup extra virgin olive oil
Sea salt and black pepper

You will also need 8 skewers and aluminum foil. 

In a small mixing bowl, combine extra virgin olive oil, fresh garlic, lime juice and lemongrass paste. Season with sea salt and black pepper. Wash mahi-mahi and dry. Rub 1/2 the lemongrass and extra virgin olive oil mixture generously on the fish. Set aside to marinade for 1 hour.

Cut yellow peppers/capsicum and onion into equal size large chunks to ensure even cooking. Remove the hard rib off the kale. Cut fish into equal size large chunks.  

Assemble kebabs (refer to the picture). Brush generously with the remaining lemongrass oil (leave some aside for serving). Season with sea salt and black pepper. Place on a sheet of aluminum foil. Place a single kebab on the foil and wrap tightly so that the juices don't leak out when it's on the grill.

Preheat barbecue to 400 F on medium heat. Place kebabs on the barbecue and cook for 10 minutes. Open up a small portion of the aluminum foil to make sure everything is cooked to your liking.

Remove from the barbecue. Serve hot.

Gluten Free Shrimp Cakes with Creamy Horseradish Mustard Sauce



Yield: 18

1 cup chopped cooked shrimp 
1 cup chopped raw kale, stems removed 
1 large chopped shallot 
2 large room temperature eggs 
1 cup cooked brown rice 
1 cup almond flour 
2 tablespoons freshly chopped dill 
2 tablespoons chopped roasted red peppers (optional) 
Sea salt and black pepper

Combine all the ingredients (add more flour if it's not binding). Season to your preference with sea salt and black pepper. Drop tablespoonfuls into the palm of your hands (wet hands in cold water to prevent sticking). Form into balls. Refrigerate for 30 minutes.

Cover the bottom of a large deep sided skillet with extra virgin olive oil or a good quality veggie oil on medium heat. When hot, add 6 cakes(don'tflatten),leaving plenty of room in between. Fry on one side until golden brown and crispy (about 3 to 4 minutes). Flip over for a further three minutes (flatten top slightly). Remove and drain on a paper towel. Serve warm with Horseradish Mustard Sauce on the side.

Horseradish Mustard Sauce:
1/2 cup plain Greek yogurt 
1 tablespoon French mustard
 1 teaspoon prepared horseradish 
1 tablespoon fresh lemon juice 
2 tablespoons raw honey 
Sea salt and black pepper

Blend all the ingredients until creamy. Season to your preference with sea salt and black pepper. Serve chilled.

Kale Rolls with Orzo Turkey and Garlic Stuffing

1/2 pound fresh ground turkey or chicken
1 cup Orzo, cooked
2 cups marinara sauce
12 large Kale leaves, washed and remove stem
1/2 white onion, finely diced
2 cups roma tomatoes, diced
1/2 cup fresh basil leaves, chopped
2 garlic cloves, crushed
3 tablespoons extra virgin olive oil
Sea salt and black pepper.

Bring a pot of salted water to a boil. Blanch Kale for 2 minutes and drop into an ice bath (icy cold water in a bowl). Run your knife along the back to remove the tough stem to make it easier on rolling. Set aside.

In a large deep-sided skillet on high heat, add olive oil. When hot, add onions and saute until soft. Season with sea salt and black pepper. Add turkey, saute until cooked and brown(keep cooking temperature on high because you don't want the turkey to retain moisture and turn to a stew. Add garlic and tomatoes and continue sauteing on high heat a further 5 minutes. Add cooked orzo and fresh basil. Season with sea salt and black pepper. Stir to combine. Remove off heat to cool.

Preheat oven to 400 F.
Lay kale flat on a clean surface. Add two tablespoons of the mixture to the middle and roll tightly to close (refer to picture). Cover the bottom of an oven proof-dish with marinara sauce of choice (about two cups). Arrange kale rolls in a single layer. Cover and bake for 30 minutes. Remove from oven. Serve hot.
