Peanut Coleslaw with Ginger-Sesame Dressing



1 small red cabbage, thinly sliced
3 celery stalks, thinly sliced
1/2 small red onion, thinly sliced
1/2 cup raw peanuts, chopped or whole
2 tablespoons sesame seeds (toasted optional)
Juice of half an orange
1 tablespoon sesame oil
2 tablespoons ginger sauce or ginger marinade
1 tablespoon raw honey
Salt and black pepper

Blend all the wet ingredients and sesame seeds in a blender for 10 seconds or until well combined. Season well with salt and black pepper and set aside. 

Toss all the vegetables, peanuts and half the vinegarette in a large mixing bowl to coat. Serve cold with extra dressing on the side. 

Perfect with grilled meat, fish or chicken.
