Slow Roasted Tomato Garlic Lamb Shanks



4 lamb shanks
4 large tomatoes
1 lemon, juiced
1 white onion, chopped
6 large garlic cloves, chopped
2 tablespoons rosemary, chopped
2 cups marinara sauce
4 tablespoons extra virgin olive oil
Sea salt and black pepper

Preheat oven to 400 F.

Rub lamb shanks with lemon juice, garlic, rosemary, and extra virgin olive oil. Season with salt and black pepper. Arrange in a single layer in a prepared large roasting pan with a lid. Pour marinara sauce over lamb shanks, roast for two hours. Remove lid and turn lamb shanks over.

Reduce heat to 300 F.

Continue roasting with the lid on for another two hours. Add whole tomatoes during the last 30 minutes of cooking. Turn oven off, leave to rest in the oven until it's time to serve.

I am trying to figure out how I almost missed this. I must be sleeping at the wheel LOL

I am looking at this and really can imagine how good it is. Were the mashed potatoes infuse with garlic. I am also thinking this would be good with soft polenta

Mike - I was going to make polenta but when I went to my pantry I had none left so mashed potatoes was the next option available to me. It was a horseradish mash. According to my husband he said it was one of my best lamb shanks recipes. :)
