Mini Spinach and Tomato Frittata




8 large eggs
1/2 cup cream
1/2 cup full cream ricotta cheese 
1 cup parmesan cheese 
2 cups baby spinach
2 cups cherry tomatoes
1 small garlic clove, minced
1/2 teaspoon olive oil
1 teaspoon sea salt
1/2 teaspoon black pepper
Preheat oven to 400 degrees F. Grease a large muffin pan (12 muffin cups) with olive oil.






In a mixing bowl, whisk eggs, cream, ricotta cheese and half of the parmesan cheese. Set aside.

Heat olive oil in a frying pan over medium heat. Place garlic, cherry tomatoes, and spinach in the pan. Toss quickly for 3 minutes. Remove from heat. Divide vegetable evenly into muffin cups.

Fill muffin cups 3/4 of the way full with eggs, cream, and cheese mixture. Sprinkle remaining parmesan cheese on top. Bake 20 minutes or until set and golden brown.

Mia, I wonder if I could substitute the cream for fat free half n half (organic of course)? I think I will try both and see!

Anonymous - I think it's a good idea to try both, as I never have! Let me know how it goes. I must say - my focus is not on low fat, it's on real food...including the value of real fats. Check out the article I just posted and follow up on it. I am learning more about it all the time too. ORGANIC is what I am shooting for here, because it is PROCESSED foods that I believe are the issue causing several of the health epidemics - especially in the United States. After years of fighting my own weight issues, last year I changed my LIFESTYLE to simply exercise regularly and eat real food. Not a diet, but merely an avoidance of processed foods.To date, I am MUCH healthier...not to mention I've actually lost 50 pounds in the last 8 months!

Anonymous 2 - My whole goal is NOT to create a DIETARY site. My goal over time is to show that it is NOT about dieting, but instead avoiding processed foods. Eating REAL foods and balancing it with lifestyle (including exercise and moderation)is what I believe in. Therefore, I am not counting calories. My blog is about enabling people to experience a simple, organic lifestyle for themselves. Over time I'll cover other aspects of that too. Again - I never lost weight easily, nor kept it off while "dieting". It is only when I stopped dieting, and started eating REAL, organic, natural foods that I began shedding the pounds and keeping it off. I hope this helps.
