4 ounces grated cheddar cheese
2 ounces grated parmesan cheese
3/4 cup whole wheat unbleached flour
1/4 teaspoon salt
4 tablespoons butter
2 tablespoons water
Place flour and salt in a food processor fitted with a steel blade. Pulse a few times to combine. Add butter and cheese and pulse 12-15 times. With the motor running, add ice water all at once through the feed tube. Keep hitting the pulse button until dough starts to come together.
Turn dough out onto a large waxed paper. Roll the dough into a log, 9 to 10 inches long and square off the ends. Refrigerate for 2 hours.
Preheat the oven to 375 F
Cut the log into 1/4 inch thick slices (I like mine slightly thicker). Arrange the slices on a ungreased baking sheet 1 inch apart. Bake for 10 minutes or until crackers are a light golden color. Turn the crackers over and bake for 5 more minutes. Cool.
This is another perfect snack idea for the kids lunches.
