Fresh Fruit Trifle


1 cup Cottage Cheese (any type)
1/2 cup fresh or frozen blueberries
2 tablespoons good quality maple syrup
2 tablespoons berry-flavor Greek yogurt
1/2 lemon juiced
Zest of whole lemon
1/2 cup chopped raw almonds
1 large ripe mango, skin removed and chopped
2 ripe kiwi, skin removed and chopped

Blend cottage cheese, blueberries, maple syrup, yogurt, lemon juice and zest until smooth. Cover the bottom of 4 parfait glasses with the creamy blueberry mixture. Sprinkle a layer of chopped almonds on top and add fruit. Top with the rest of the creamy blueberry mixture and sprinkle with almonds. Refrigerate until ready to serve.

You can also use any fruit of choice for this dessert.

Serve 4
