Baked Stuffed Mozzarella Sweet Peppers in Marinara Sauce


2 pounds mini sweet peppers
1 pound fresh mozzarella ball
2 cups fresh marinara sauce
Extra virgin olive oil
Sea salt and black pepper

Preheat oven to 400 F

Cut off stems and remove seeds from inside peppers. Stuff the peppers full with slices of mozzarella. 

Add marinara sauce to a large casserole dish, spreading thoroughly to cover the bottom. Arrange stuffed peppers on top and season with sea salt and black pepper, further drizzling with extra virgin olive oil. Bake for 1 hour or until peppers are soft and caramelized.

Best when served hot.

Looks good. My neighbor, who is from Mexico, makes something similar...but she uses the HOT peppers and stuffs them with cream cheese then puts them on the grill.
I've been making little sweet peppers on the grill wrapped in bacon with a little brown sugar and oh, is that yummy! I'll have to try this recipe, too. Looks good! :) Happy Monday to you, dear!
