Poached Eggs

4 Large fresh Eggs, cold
Sea salt and black pepper
4 thimble cups or small ramekins

Grease ramekins or thimble cups with melted butter and add eggs. 

Add two cups of water to a deep sided skillet. Cover and bring to a boil. 

Add eggs in cups, close lid and boil for 4 minutes. Remove from heat. 

Season with sea salt and black pepper. Sprinkle fresh mozzarella or cheese of your choice over the top and fresh herbs. Very nice served with sourdough toast and fresh fruit.

Very simple and pretty! I've never made poached eggs in a ramekin, but will have to try that!
